Food should always be healing and that's my philosophy. As a child growing up in Liberia, sweet potatoes were one of my favorite food to eat and still is. I like to experiment with different styles of preparation. I learned later while residing in the US that it was also a popular dish as well but the appearance was a bit different from what I was used to eating. Most sweet potatoes have a orange like color which in my opinion isn't very sweet comparing to the purple skin appearance. With that being said, here are some benefits of Sweet potatoes of whatever skin appearance it has according to some health websites :)

It may help fight against Cancer because of the antioxidants.
May Enhance Brain function.
May support your Immune System & more.
My favorite way to eat it would be boiled with the skin on in a pot and after it becomes soft which means it's ready to be served, add some butter while it's hot and cinnamon. Yum :)
