I love vegetables my way

Yes, "I love vegetables" that is exactly what everyone say to the doctor when we're being asked if we're eating them often. As you know know by now that I was born in Liberia and most of our meals are vegetable based. We eat a lot of greens and I do love colorful veggies of all kind. One of my favorite vegetable dish from Liberia is called "Tobergee"- (Toy-boy-gee). As I researched and always known that it looked similar to Eggplants while watching my mother or grandma prepare our food daily.
